I am kinda lovin’ this salad right now. It’s easy. It’s yummy. Enough said.
INGREDIENTS
Lettuce- Any kind will work! I like to mix Romaine and Spring Mix or Arugula
1 Avocado diced
1 Grapefruit peeled and cut into segments
1∕4 cup Toasted Almond Slices – Find these @ Trader Joes
1/3 cup White Vinegar
1/4 or less cup Honey or Agave (depends on whether you’re feeling calorie conscience or not!)
2 teaspoons Yellow Mustard
1 teaspoon finely chopped Shallot or grated Onion
Dash salt
3/4 cup or less vegetable oil
1 teaspoon poppy seeds
DIRECTIONS
Combine the lettuce, avocado, grapefruit, almonds, and chives in a large salad bowl.
In a mason jar mix the remaining ingredients (Vinegar on down) and shake, shake, shake.
Serve & Enjoy!
